Ground turkey in a Cuban sofrito with Twisted Iced Tea
I made a dish for lunch and dinner tomorrow. I took a recipe for a Cuban sofrito and added ground turkey to it. I originally had the sofrito in a quesadilla and really enjoyed the flavor. Sofrito is saute green peppers and onions with garlic, cumin, oregano and white wine vinegar. It is the vinegar that really gives the flavor character. I added in ground turkey for a protein and grated carrot for more fiber, color and taste. The sofrito recipe is from The Fresh 20 for Feburary 1 in the Classic plan. I also had a Twisted Tea by Samuel Adams in Sun Tea flavor. It was good. I could taste the difference between a regular iced tea brew and the sun tea.
